Ingredients 1 cup frozen limeade concentrate, defrosted
1 pound soft silken tofu, drained
3 Tablespoons sugar
1 Tablespoon tequila (eliminate if non-alcoholic is desired)
½ teaspoon grated lime zest
Lime zest curls for garnish
Instructions In a blender combine all ingredients except garnish, process until smooth. Pour into dessert cups, dishes or glasses. Refrigerate until set, about 2 hours. Garnish with lime zest curls.
