Cookie Dough Ingredients 1 cup shortening

3/4 cup brown sugar

2 eggs, separated

1/4 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 cup soy flour

1 teaspoon baking soda

1 teaspoon cream of tartar

Pinch salt

1 cup finely chopped soy nuts


Frosting Ingredients 2 tablespoons butter, softened

2 ounces cream cheese, softened

2 ounces Mascarpone cheese

1 cup powdered sugar

1/2 teaspoon vanilla extract


Instructions Preheat oven to 350° F.

In large mixing bowl, beat shortening, brown sugar, egg yolks and vanilla until well blended.

In small mixing bowl, stir together flours, baking soda, cream of tartar and salt.

Add flours to egg mixture and beat until blended.In small bowl, beat egg whites with a fork until just frothy.

Using measuring teaspoon or by teaspoonsful, form dough into 1-inch balls.

Dip balls in slightly beaten egg whites and then roll in chopped soynuts.

Place on ungreased baking sheet and bake 5 minutes.

Remove cookies from oven and press thumb onto top of each cookie to form a small cup.

Bake 5 more minutes.

Transfer cookies to rack and let cool.


Frosting Instructions In medium mixing bowl, combine all ingredients and beat well.

If you wish, tint frosting green or red with food coloring.

Drop frosting from tip of spoon into center of each cooled cookie.

Sprinkle with additional chopped soy nuts, if you wish.


Notes Makes 4 to 5 dozen cookies
