Black Soybean Salsa

Ingredients
  1. 1 -15 ounce can black soybeans, drained and rinsed
  2. 1 small tomato, diced
  3. 1/4 small yellow onion, minced
  4. 2 large cloves garlic, minced
  5. 1 tablespoon cilantro, chopped
  6. 1 1/2 jalapeños, minced
  7. 1 1/2 limes
  8. 1 teaspoon smoked tomato powder
  9. Salt to taste
Instructions
  1. In a medium bowl, add black soybeans, tomato, onion, garlic, cilantro and jalapenos, mix. Juice limes, add to soybean mixture. Add tomato powder and salt to taste. Mix gently and let set for two hours before serving

Tofu "Egg" Salad

Ingredients
  1. 1 (14 ounce) package water-packed firm tofu, drained and crumbled
  2. 1 (14 ounce) package water-packed extra firm tofu, drained and diced
  3. 2 tablespoons chopped dill pickle chips
  4. 1 tablespoon turmeric
  5. 3 tablespoons minced green onion
  6. 3 tablespoons minced parsley
  7. 1 tablespoon whole grain mustard
Instructions
  1. In a large bowl, add diced and crumbled tofu; mix together. Add remaining ingredients; mix together well. Add tofu mayonnaise, gently mix.
Notes
  1. Yield: enough filling for 12 sandwiches. Use favorite bread or croissants for making sandwiches.

Ingredients
  1. 2 (12.3 ounce) packages extra firm silken tofu, divided
  2. 1 tablespoon lemon juice
  3. 2 tablespoons Dijon mustard
Instructions
  1. In a food processor, combine 1 package of silken tofu (with the water) lemon juice, mustard, garlic powder, sugar, salt and vegetable oil. Blend until smooth. Set aside.
