Monday: We made changes to the recipes from the first round of testing according to the comments we received at the taste panel on Friday. We will retest a couple recipes, but most of the recipes just needed minor changes so we won’t retest. We went grocery shopping for our next round of testing: some TSP recipes and some tofu recipes.
Tuesday: Linda Svendsen taught us how to use Genesis to determine the nutritional content of all out recipes. We entered all our ingredients and amounts into the Genesis system and then transferred our results to word documents to include in our recipe packets. We spent the afternoon testing recipes.
Wednesday: In the morning we tested recipes, the whir the blender and food processor could be heard almost constantly, as we are testing recipes using silken tofu, in the place of sour cream, mayo, cream cheese, and pudding; so most of our recipes start by pureeing silken tofu. In the afternoon we continued to edit our recipes and worked on compiling our recipes into a final packet.
Thursday and Friday: We finished testing recipes in preparation for the next taste panel. We downloaded a recipe book template and started converting the format of our recipes to create a professional cookbook of our recipes.
