No Cook, No Egg Eggnog

Ingredients
  1. 21 oz. extra-firm silken tofu
  2. 2 cups soymilk
  3. ½ cup honey
  4. ¼ teaspoon salt
  5. 1 cup cold water
  6. 1 cup rum or brandy (or use apple juice with rum or brandy flavoring to taste)
  7. 4 ½ teaspoon vanilla extract
  8. 20 ice cubes
  9. Nutmeg
Instructions
  1. Crumble the tofu and blend with soymilk, sugar and salt. Blend until smooth. Pour into mixing bowl, and whisk in water, rum and vanilla. Cover and refrigerate.
  2. To serve, blend half of the mixture in the blender with 10 of the ice cubes until frothy. Repeat with the other half. Serve in glasses with nutmeg sprinkled on top.

Ingredients
  1. 1 cup silken tofu
  2. 1/2 cup frozen strawberries
  3. 2 cups unsweetened vanilla almond milk
  4. 1 tsp. vanilla extract
  5. 3 tbsp. honey
  6. 1 frozen banana
  7. 2 tbsp. cocoa powder
  8. 1 cup ice
Instructions
  1. Place all ingredients in blender.
  2. Blend baby blend until you get a silky, creamy milkshake. About 90 seconds using a high powered blender. Feel free to adjust liquid to make it thicker/thinner to your liking.

Ingredients
  1. 2 cups frozen raspberries
  2. 1- 8 ounce, small carton plain soy yogurt
  3. 3 Tablespoons soft silken tofu
  4. ¾ cup vanilla soy milk
  5. ¼ teaspoon almond extract
  6. 1 Tablespoon sugar
  7. 1 cup chocolate brownie chunks*
  8. Fresh mint leaves for garnish
Instructions
  1. In a blender, add all ingredients except chocolate chips, process until smooth.
  2. Stir in brownie chunks.
  3. Pour into servings glasses.
  4. Garnish with fresh mint.
  5. Serve immediately.

Ingredients
  1. 1 cup frozen limeade concentrate, defrosted
  2. 1 pound soft silken tofu, drained
  3. 3 Tablespoons sugar
  4. 1 Tablespoon tequila (eliminate if non-alcoholic is desired)
  5. ½ teaspoon grated lime zest
  6. Lime zest curls for garnish
Instructions
  1. In a blender combine all ingredients except garnish, process until smooth. Pour into dessert cups, dishes or glasses. Refrigerate until set, about 2 hours. Garnish with lime zest curls.

  1. ½ Cherry Berry Blend frozen berries, partially thawed
  2. ½ cup lite vanilla soymilk
  3. 1 tablespoon orange juice
  4. ¼ cup fresh spinach
Instructions
  1. Measure the berries, lite vanilla soymilk, orange juice and spinach into a blender and blend until thoroughly combined.

  2. ¾ cup frozen sliced peaches, partially thawed
  3. ¼ cup orange juice
  4. ¼ cup lite vanilla soymilk
  5. 1 tablespoon oats
  6. 1½ teaspoons honey
Instructions
  1. Measure the banana, peaches, orange juice, lite vanilla soymilk, oats and honey into a blender and blend until thoroughly combined.
Notes
  1. *Serving Suggestion: Sprinkle the top of the smoothie with oats and a drizzle of honey.

This smoothie recipe makes a great meal. If you are using soy milk, be sure to check the nutritional label.

Ingredients
  1. 1 Cup Milk or Soymilk ( I use 1%)
  2. 1 Cup frozen strawberries (or fresh if available)
  3. 1 kiwi, peeled
  4. 1 Cup ice cubes (if using fresh strawberries)
  5. 6 almonds
Instructions
  1. Add the milk, strawberries, and kiwi to a blender and
  2. mix until smooth.
  3. Add ice, if desired and continue to blend until smooth.
  4. Top with the almonds for a delightful breakfast on the go!
  5. I have also used 1/2 banana instead of the kiwi.
