Hello! My name is Jantina and I’m a transplant to the foodie world. Every day I find myself falling deeper and deeper in love with this world. That’s why I am writing today. I think it is time for me to make the jump about my explorations and discoveries… which of course, includes soyfoods!
A few more tips about me. I have a husband, Matt, of 8 years and we have 5 children. You can imagine as you read this, we are constantly looking for ways to feed our family cost-effectively as well as maintain a nutritionally balanced meal plan. I have a strong mix of great eaters along with one or two picky eaters (including myself! Ha!)
So… this past weekend I found myself in a pinch. My husband was at the Iowa State University football game and I needed to think of something for dinner. I did what we all do, I opened the fridge and stared. I was immediately overwhelmed with my good intentions sitting on the shelf (i.e. boxes and boxes of tofu). I pulled up the Soyfoods Council website and searced for Easy Stuffed Shells. Then I searched out Tofu Pumpkin Pie but we will get to that later. I know; right? This just sounds like trouble. And yes, I like sweet foods, now is probably a good time to admit that!
So I made easy stuffed shells for the family… we devoured them! I should have made a second pan. Seriously! The kids were licking the cheese off the plate (cheese + tofu). Every child ate it. I still can barely believe it! Do you have food stories like this? The ones where you were totally skeptic and then wonderfully surprised at how good it really was? Tell me about it!
