How does soy fit into the new Dietary Guidelines?
Many soyfoods are nutrient dense. Increasing the intake of nutrient dense foods allows one to easily decrease added sugars, sodium and solid fat in the diet. Soy can be used as a lower fat, high protein alternative. Many soy products are good sources of fiber, iron, calcium, and potassium (ADA, 2003).

Polycystic ovary syndrome (PCOS) is a condition in women involving an imbalance of sex hormones. Women with PCOS may experience changes in their menstrual cycle, skin changes, small cysts in the ovaries, and difficulty conceiving, among other problems. Between five and ten percent of women of reproductive age have PCOS and it is thought to be one of the leading causes of female subfertility.
Although the predominant sex hormones in women are estrogen and progesterone, all women have small amounts of androgens, which are “male hormones.” In women with PCOS, the body makes too much of the androgen hormones and there can be changes in levels of other hormones as well. As a result, some women may develop male sex characteristics including deepening of the voice, increased body hair on the chest, abdomen, and face, and male-pattern baldness.
Because the isoflavones in soybeans have some estrogen-like properties, Iranian researchers set out to determine whether isoflavones could help women with PCOS. They studied 146 women with PCOS over a period of three months. Average age of the women was 27 years. Half of the subjects were given genistein, the main isoflavone in soybeans, and the other half were given a placebo. The amount of genistein provided was equal to about three servings of soyfoods.
At the end of the study, women who had consumed genistein had decreased levels of serum testosterone. They also experienced a drop in LDL-cholesterol (the bad cholesterol). As a result, their increased isoflavone intake helped to partially restore hormonal balance, with an additional benefit of reduced heart disease risk.
The authors concluded that genistein could be considered as an alternative treatment for women with PCOS and could offer a number of advantages. Since soyfoods are rich in genistein, these foods will likely work as well.

- 2 tablespoons oil
- 2 packages tempeh, broken into small pieces
- 2 tablespoons chopped onion
- 1 teaspoon garlic, chopped
- 2 tablespoons paprika
- 1 teaspoon ground fennel
- 2 teaspoons soy sauce
- 1 teaspoon cracked pepper
- 1 teaspoon crushed red peper
- 1 teaspoon basil
- Salt to taste
- 2 cups tomato sauce
- 2 tablespoons Parmesan cheese
- 4 hoagie buns, split
- 1 cup shredded mozzarella cheese
- Garnish with hot peppers if desired
- In a sauté pan, add oil and heat.
- Add tempeh and brown. Add onion and garlic, stir.
- Cook 1 minute. Add all ingredients except last four, stir to blend.
- Add tomato sauce, simmer for about 20 minutes.
- Add Parmesan cheese (substitute dairy free parmesan cheese if desired), stir to blend.
- Divide mixture equally into 4split hoagie buns and top with mozzarella cheese (substitute vegan mozzarella if desired) and pickled hot peppers.
- Toast in toaster oven to melt and serve immediately.
- Yield: 4 servings
